Quang noodle is a specialty dish of Da Nang and Quang Nam provinces. This dish is made mainly from finely ground rice flour to form fibers and eaten with broth and some ingredients such as eggs, chicken, pork...

Unlike other specialties that represent a certain province, Quang noodle is a culinary symbol of both Da Nang and Quang Nam provinces. The reason is that since 1997, Da Nang was officially separated from Quang Nam province. Previously, because it was a territory of this province, the origin of Quang noodles also came from stories that took place in Quang land.

Around the 16th century, Hoi An in Quang Nam province was an international trading port with many bustling trade activities. Many foreigners come to Hoi An to live and work. Therefore, this land is a place of cultural and culinary interference from many places.

When coming to Hoi An to live, the Chinese brought their cuisine with them, including "noodles" - a product made from bright flour created by the Chinese. The people of Hoi An at that time were influenced by Chinese cuisine, so they also created dishes with a slight resemblance to the noodle dishes of your country. However, the difference is that although it is called "noodle", its fibers are made from rice flour, not using flour. Maybe people borrowed the name "noodles" because its shape is all the same fiber. Also because this noodle dish is made on Quang land, people have given it a very simple name that is "Quang noodles". This is a unique creative dish of Quang Nam people with a processing method suitable for Vietnamese taste.

Quang noodles are very easy to cook and almost every person in Da Nang and Quang Nam knows how to cook this dish. This is a popular dish, not fussy, not strict about how to prepare. Perhaps that's why this noodle dish has a strong vitality with more than 500 years old.

To make noodles, people choose delicious rice, clean it, soak it in water for about 4 hours and then grind it into a powder (in the past, when there was no grinder, people had to pound it with a manual mortar very hard). This rice flour must be mixed with water in a certain ratio to make the noodles neither too wet nor too dry. You can add a little turmeric to create an eye-catching yellow color for the noodles.

Next, people will boil a pot of hot water, stretch a cloth to cover the mouth of the pot, then scoop each patch of slightly thick dough and pour it in a circle. Then, cover the lid and steam the dough for about 5-7 minutes until the dough is cooked and then use a flat stick to remove the noodles from the cloth. Noodle leaves will be placed on a flat surface and applied with a little peanut oil (the oil extracted from peanuts is used to make the dish more fragrant).

In the bowl of Quang noodles, in the bottom layer is a mixture of raw vegetables; the next layer is yellow noodles mixed with white noodles; on top is the filling with optional ingredients such as shrimp, chicken, frog, egg... Next, people sprinkle some onions, some roasted peanuts on top.
